🌱 One-Skillet Mediterranean Pork Tenderloin

Tender pork medallions, colourful vegetables, lemon, feta, and a creamy Greek yogurt sauce come together in one skillet for a quick weeknight meal that feels a little fancy without the extra work.

Ingredients

  • 1 pork tenderloin (about 1–1¼ lbs), trimmed and sliced into medallions

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • ½ small red onion, sliced

  • 1 cup cherry tomatoes

  • 1 cup baby spinach

  • ½ cup chopped artichoke hearts

  • ½ cup low-sodium chicken broth

  • Juice of ½ lemon

  • ⅓ cup plain Greek yogurt

  • ¼ cup crumbled feta cheese

  • 1 tbsp fresh parsley, chopped

Directions

  1. Season the pork medallions with Italian seasoning, smoked paprika, salt, and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork for 3–4 minutes per side until golden. Remove from the pan and set aside.

  3. Add the red onion and cherry tomatoes to the skillet. Cook for 3–4 minutes until softened.

  4. Stir in the artichokes, spinach, chicken broth, and lemon juice. Cook until the spinach wilts.

  5. Lower the heat and stir in the Greek yogurt until the sauce is smooth and creamy.

  6. Return the pork to the skillet and simmer for another 2–3 minutes until heated through.

  7. Sprinkle with feta and fresh parsley before serving.
