🌱 Loaded Beef & Crispy Sweet Potato Skillet
A colourful one-pan meal loaded with lean ground beef, crispy seasoned sweet potatoes, vegetables, and plenty of flavour. Even sweet potato skeptics might become believers.

Ingredients
Sweet Potatoes
2 medium sweet potatoes, diced small
1 tbsp olive oil
1 tsp smoked paprika
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder (optional)
Salt and pepper
Beef Skillet
1 lb lean ground beef
1 small onion, diced
1 red bell pepper, diced
1 cup corn
1 cup black beans, drained and rinsed
2 cups baby spinach
1 tsp taco seasoning
½ tsp smoked paprika
Salt and pepper
Toppings
½ cup shredded cheddar cheese
½ cup plain Greek yogurt
1 avocado, diced
2 green onions, sliced
Fresh cilantro (optional)
Lime wedges
Directions
1. Crisp the sweet potatoes.
Preheat oven to 425°F.
Toss the sweet potatoes with olive oil, smoked paprika, chili powder, cumin, garlic powder, salt, and pepper.
Spread onto a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and crispy around the edges.
2. Cook the beef.
While the potatoes cook, heat a large skillet over medium heat.
Cook the ground beef and onion until browned.
Drain excess fat if needed.
Add the bell pepper, corn, black beans, taco seasoning, smoked paprika, salt, and pepper.
Cook for 4-5 minutes.
Stir in the spinach until wilted.
3. Bring it together.
Fold the crispy sweet potatoes into the beef mixture.
Sprinkle with cheddar cheese and let melt slightly.
4. Serve.
Top with Greek yogurt, avocado, green onions, cilantro, and a squeeze of fresh lime.
