Dark Cherry Chocolate Peanut Butter Cloud 🍒🥜🍫
Creamy. Fluffy. Chocolatey. Just a little decadent. This is the kind of snack that feels like dessert but is built with ingredients that bring a little more nourishment and staying power to the table.
Makes: 4 small servings
Prep time: 10 minutes + chilling
Ingredients
For the Peanut Butter Cloud
1 cup plain Greek yogurt
¼ cup natural or organic peanut butter
½ cup whipped coconut cream
1–2 tbsp pure maple syrup, to taste
½ tsp pure vanilla extract
Small pinch of sea salt
For the Cherry Layer
1 cup fresh or frozen dark sweet cherries, pitted and chopped
½ tsp pure vanilla extract
Optional: 1 tsp maple syrup if your cherries need a little sweetness
For the Chocolate Topping
30 g dark chocolate, melted
1 tsp coconut oil, optional, for a thinner drizzle
To Finish
Chopped roasted peanuts
A few dark chocolate shavings
Fresh or thawed dark cherries
Tiny pinch of flaky sea salt, optional
Directions
1. Prepare the cherries.
If using frozen cherries, thaw and drain any excess liquid. Chop them into bite-sized pieces and stir with vanilla and optional maple syrup. Set aside.
2. Make the peanut butter base.
In a medium bowl, whisk together the Greek yogurt, peanut butter, maple syrup, vanilla and sea salt until completely smooth and creamy.
3. Make it a cloud.
Gently fold the whipped coconut cream into the peanut butter-yogurt mixture. Don't overmix—you want to keep some of that light, fluffy texture.
4. Build your cups.
Spoon a layer of dark cherries into four small glasses or dessert cups. Top with a generous layer of peanut butter cloud. Add another few cherries if you'd like.
5. Add the chocolate.
Melt the dark chocolate, adding the coconut oil if using. Let it cool slightly, then drizzle over each cup. For a thin chocolate shell, spread a light layer across the top and refrigerate until set.
6. Finish and chill.
Top with chopped peanuts, dark chocolate shavings and a cherry. Add the tiniest pinch of flaky sea salt if you love that sweet-and-salty combination.
Refrigerate for about 20–30 minutes before serving—or dig in immediately if you can't wait. I wouldn't blame you. 😂
The GEN Reimagined Tip
Want it lighter and fluffier? Add a little more whipped coconut cream.
Want it higher in protein? Use more Greek yogurt and slightly less coconut cream.
Want it extra peanut buttery? Add another spoonful of peanut butter—but taste as you go. A little goes a long way when it's paired with dark chocolate and cherries.
And if you don't have cherries? Raspberries or strawberries would be delicious here too.
