Ingredients
For the Chicken
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
Juice of ½ lemon
Salt and pepper to taste
For the Bowl
2 cups cooked quinoa or rice
1 cup cucumber, chopped
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
½ cup kalamata olives
½ cup crumbled feta cheese
Fresh parsley or dill for garnish
For the Creamy Yogurt Sauce
¾ cup plain Greek yogurt
Juice of ½ lemon
1 garlic clove, minced
1 tbsp fresh dill or parsley
Pinch of salt and pepper
Instructions
In a bowl, combine olive oil, oregano, garlic powder, lemon juice, salt, and pepper. Coat chicken well.
Cook chicken in a skillet or on the grill over medium heat until golden and fully cooked through, about 5–6 minutes per side depending on thickness. Let rest before slicing.
While the chicken cooks, prepare quinoa or rice and chop vegetables.
In a small bowl, mix together all yogurt sauce ingredients until smooth and creamy.
Assemble bowls with quinoa or rice as the base. Top with chicken, cucumber, tomatoes, red onion, olives, and feta.
Drizzle with yogurt sauce and garnish with fresh herbs before serving.
