🍏 Cranberry Chicken Apple Bites

Sweet, crunchy, creamy, and perfect for entertaining.

Some appetizers look fancy but couldn't be easier to make. These Cranberry Chicken Apple Bites are one of my favourite crowd-pleasers for summer BBQs, holiday gatherings, or a simple snack board. Crisp apples, creamy chicken salad, tart cranberries, and crunchy pecans make the perfect bite.

Ingredients

Chicken Salad

  • 2 cups cooked chicken, diced or shredded

  • 1/3 cup dried cranberries, chopped

  • 1/3 cup chopped pecans or walnuts

  • 1 celery stalk, finely diced

  • 2 green onions, sliced

  • 1/2 cup plain Greek yogurt

  • 2 tbsp light mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp fresh lemon juice

  • 1 tsp honey

  • Salt and pepper to taste

  • 1 tbsp chopped fresh parsley

For Serving

  • 2 large Honeycrisp apples

  • Extra chopped pecans

  • Fresh parsley or microgreens for garnish

Directions

  1. In a large bowl, combine the chicken, cranberries, pecans, celery, and green onions.

  2. In a separate bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, honey, salt, and pepper.

  3. Pour the dressing over the chicken mixture and stir until evenly coated.

  4. Stir in the fresh parsley.

  5. Slice apples into rounds about 1/4-inch thick. Remove seeds if needed.

  6. Top each apple slice with a spoonful of chicken salad.

  7. Garnish with extra pecans, parsley, or microgreens before serving.

• Rotisserie chicken works beautifully and makes this recipe come together in minutes.

• Want to make it nut-free? Swap the pecans for roasted pumpkin seeds or sunflower seeds for a little crunch.

• The chicken salad can be made a day ahead and refrigerated. Assemble the apple bites just before serving for maximum freshness.
